Yorkshire Puddings
8 heaped tbsp plain flour
good pinch of salt
2 eggs
dash of cold water
sufficient milk to make a thick batter consistency

Beat together all ingredients and leave to stand for 20 minutes. Place a bit of oil in each of the compartments in the pudding tray and place in hot oven (190°C) for five minutes to warm up. Beat mixture once more when you remove tray from oven and fill each compartment. Return to oven and DO NOT OPEN AGAIN for at least 15 minutes. After 15 minutes you can turn the oven temperature down to 180°C if you want but it's not essential. Should be ready 25-30 minutes from when they first went in.
NOTE: If these are being cooked along with other items in the oven, make sure they go on the lowest shelf otherwise they don't tend to rise as well and can get a bit soggy.
If you make too much you can always use the leftover mixture for pancakes at breakfast next morning!
